About the Role
Overview
Responsible for production of sushi within the department. Must reside close to store. Ensure food safety compliance and maintain high standards in all fish-related preparation.
Responsibilities
- Produce sushi recipes according to the production plan to support sales growth and minimize waste on a weekly basis.
- Follow the production plan to ensure readiness of upcoming promotional lines in conjunction with the Sushi Chef.
- Produce sushi products in line with the department’s standards and recipes.
- Maintain a clean work environment at all times and uphold hygiene standards; maintain cold chain.
- Prevent cross contamination in the department and ensure adherence to food safety procedures.
- Assist with monthly stocktakes; conduct waste scanning daily as part of food safety and inventory control.
