About the Role

A Big Five game reserve in the Eastern Cape is seeking an experienced SENIOR SOUS CHEF to join their kitchen team.

This is a senior culinary role within a well-established five-star lodge environment, ideal for a chef who can run a shift with authority, manage a brigade under pressure, and still keep an eye on the guest experience at the same time.

Core Criteria:


  • Diploma or other formal qualification in Culinary Arts

  • Minimum of 5 years' experience in a senior culinary role within a 5-star lodge or hospitality environment

  • Proven experience leading and managing kitchen brigades

  • Strong understanding of food costing, stock control, and wastage management

  • Working knowledge of Micros/POS systems and Microsoft Office

  • Valid driver's license

  • Excellent spoken and written English

  • Sound knowledge of Food & Beverage service principles
